Tastes from the farm

Et voilà! A full, full day of harvesting (we are all quite content to be sitting down!), and the baskets safely sent off before the deluge began to fall upon us. (Although those who are delivering did get a little stuck in the rain!)

The third basket. It’s a little hard to believe! We kept saying to each other how quickly the time is passing, here amidst the green growth of Covenant Farm… It seems quite unbelievable that we are nearly at the end of June already. Seasons are a force to be reckoned with, that’s certain.

The garden is flourishing! We had handsomely large collard greens to try to fit into the baskets this week, along with some equally good-looking and plump Hakurei. And we ventured into our Lopin Ouest, the West Field today! Our first forage into the more recently planted vegetables. The eagerness of the vegetables is palatable! (In more ways than one…)
There is something really wonderful about the harvest… It creates a happiness from a combination of things, I think: part eagerness to see the fruits (and veggies!) of our labour, part sheer joy of being in the fields, part awe of the natural world in the wee, early hour of the morning and part thinking about those who are going to eat the vegetables you are harvesting. And, of course, delicious and varied things that can be made out of them!

As an accompaniment to the handsome bunches of chou-collard, collard greens that await the members in their baskets, I have found a few recipes that look good! I hope they help with the collard consumption, and bon appetit!!

Spicy Coconut Soup with Sweet Potato and Collard Greens

Potato and Collard Green Hash

Collard Greens Pie

One more thing about those collard greens: the bottom of their leaves have a beautiful silvery sheen under water! There’s something I never knew! How can you go wrong with a green like that…

Thank you all for your hard work – the baskets have been wonderful! Just enjoyed some delicious steamed greens for breakfast and will be sampling my quick pickled turnips tomorrow. This “yum!” is thanks to all of you! Cheers! Jaime
